Venezuela has been developing an explosive increase in the exploitation of aquaculture and the cultivation of shrimp (L. Vannamei) in its rich soils. VENEZUELAN PRODUCTION
The commercial cultivation of shrimp in Venezuela began at the end of the 1990's with around 8 active production units, consolidating itself as an important economic activity between the years 2006-2015 with 32 farms dedicated to its production and commercialization, mainly outside our borders. Currently there are 38 companies with approximately 12.0 thousand hectares of shrimp pools distributed in the states of Trujillo, Anzoátegui, Sucre, Nueva Esparta, Merida, Falcon and Zulia, of which around 11.0 thousand hectares are located in the west, mainly in the state Zulia, and a smaller proportion in Falcon.

MAIN LOBSTER (Homarus americanus)
Homarus Lobster can be found from Canada all the way down to North Carolina, but nothing compares to the sweet taste of a cold water Maine Lobster. Maine Lobster feature two large front claws and a meaty tail. They come in many colors but most notably a dark brown/red color. They can live up to 100 year and grow up to 4 feet long. Maine Lobster make for an excellent meal!

Canners get their name from the mid 1800's when lobsters were a canned product. It takes a lobster about 5-7 years to reach 1lb.

The most plainful size of Maine Lobsters are 1 1/4 pound each, making them a great size for a lobster bake party!

A minimum size lobster will weigh around 1lb. Not much meat in these little "bugs"as two might not be enough for the real lobster lover.

WILD CAUGHT BLUE CRAB (Callinectes sapidus)
Artisanal crab fishing on lake Maracaibo in Venezuela has been a process that has been carried out by the people of the coast for many years.
The delicious fresh crab meat is one of the best values on the market. The crab goes trough a cooking process similar to pasteurization called hydrostatic pressure processing or "HPP". This allows for an increased shelf life and highlights the natural sweetness of the crab.

BLUE CRAB MEAT
Picked crab meat is a great alternative to cooking live crabs. You get all the meat and none of the work.
Jumbo Lump is the top tier of blue crab meat in North Carolina. This meat is from muscles found on the back of the crab.
The pieces are whole and plump with a bright white appearance. It is best utilized in dishes where large pieces of crab aredesired, such as pasta or curries.
Lump is essentially the same meat as Jumbo Lump, but the pieces have broken and fallen apart. There may also be a bit
of backfin meat mixed into a container of Lump. Lump is a great option for crab cakes, stuffing, or casseroles.
Backfin is made up of small flakes picked from the body of the crab, called special meat. Backfin usually has some shellpieces mixed in. Take care to pick those out when preparing your dish. Backfin is ideal for crab cakes, salads, or soups.
Claw meat comes from the claws and the legs of the crab. This meat is darker and more varied in color. The flavor is a bit
stronger than meat from the body of the crab, making it good for dips or stews.
